I made an applepie this morning - the first one of those I ever made - from the apples of my parents garden. Warm and delicicious. We have plenty of apples this year in our garden, yum!

@Esp12: so here's the recipe for you (a bit late, sry)

Alsatian Apple-Pie

for 14 pieces you'll need:

1 baking-pan (28cm)

120g butter
160g powdered sugar/confectioners sugar
a pinch of salt
the pulp of 1 vanilla bean
2 teaspoons lemon peel
4 eggs (size M)
200g flour
800g apples (the more sour ones)
5 tablesponns lemon-juice
1/2 teaspoon cinnamon
200ml cream
3 tablespoons powdered almonds
baking parchment
uncooked peas (hard) to blind-bake (special technique, I don't know if you know this. It's used if the dough should be filled and must be pre-baked before the filling comes in)

You need about 3 hours of time, because it needs some calmness to do this ;)

1) Put the butter (needs to be a bit warm, maybe it's good to put it out of the fridge some hours before you use it, and maybe it's easier if you make little pieces of it), 75 of powdered sugar, the pinch of salt the vanilla and 1 tablespoon of lemon-peel into a bowl and stir it with a dough-hook until it's a sleek dough. Add the flour. Stir a bit, not tooo much. Maybe you need to add a bit more of flour, if the dough is still too moist. But be careful, it shouldn't be to dry. It has to feel buttery enough but you should also be able to form a ball of it. Form that ball and wrap it into cling film. Put it into the fridge for at least one hour.
2) Flour the table you are working on, put the cooled (and more hard) dough on it. Press the dough until it's about 32cm and put it into a buttered bakin-pan, so there is a 1-2 cm border (for the filling later). Recess the dough with a fork. Cover the dough with baking-parchment (maybe cut a circle of it before) and then put the uncooked peas on it to blind-bake it. Bake it on 200°C/480 K/390°F top-/bottom heat about 15min.

3) Peel the apples and cut it into small slices, dore them and carve them a bit on the round side in every 1cm distance. Put them together with lemon-juice immediately (so they don't get brown).

For the filling:
Put together 3eggs, the other 75g of powdered sugar 1 teaspoon of lemon-peel, cinnamon, cream and 2 teaspoons of lemon-juice. Stir well!

4) Put the half-baked dough out of the oven. Be careful by removing the hot baking-parchment and the peas. Spread the powdered almonds over the dough and put the appleslices on it. Disperse the filling over it and bake at the same heat as before about 30 min (until the apples and the borders of dough begin to get brown like you see on mine). Cool the pie down in the baking-pan and later put on some powdered sugar (when it's cold) for decoration (with a sieve).

Chocolate-Chipolte Apple Spice Pie

(filling)
5 tart green apples, peeled
1 Tablespoon lemon juice
1/3 c walnuts, chopped
1/3 c raisins
1/4 c dates (if you have them)

(dry spices)
1/2 Cup sugar
2 Tablespoons flour
3 Tablespoons unsweetened cocoa powder
1-2 teaspoon chipolte chili powder (1 is a little zip, two is becoming spicy after you've had several bites w/o the sorbet, I think I put in 3, but I like to live dangerously, and I also put a tablespoon or two of my dry spice mixture {sans sugar/flour} into canned pumpkin pie filling. I'm not sure if you could taste it or not.)
1/2 teaspoon ground cinnamon
1/4 teaspoons ground nutmeg
1/8 teaspoon ground allspice
1/8 teaspoon ground cardamom
1/8 teaspoon cloves

(wet spices)
1/2 teaspoon freshly grated ginger * personally, I could have had more, but ginger to your taste
1/2 teaspoon freshly grated orange peel * could do a bit more, if you want
1 teaspoon molasses (only if you have it)
1 teaspoon of vanilla * could do a bit more, if you want
1/8 teaspoon almond essence (if you have it)

(for underneath the top shell)
4-5 tablespoons of honey
2 tablespoons of butter

Pie crust for 9 inch pie pan (I did just a normal upper crust/lower crust deal, butter crust, with the vinegar to make it extra tender, but put cinnamon in it. I later saw a recipe for apple pie crust with ground almonds in it... which would have been super-nifty.)

Peel/slice apples and what not, fling the lemon juice on them, and mix it up with the wet spices and the walnuts and raisins. Mix dry spices separately to prevent clumping of spices, in this case an unsuspecting lump of spice could be bad berries. Mix dry spices/sugar with everything else and pack into a 9 inch pie shell. I didn't pre-bake my bottom pie shell and it was fine.

Drizzle several tablespoons of honey (4-5?) on the top of of the pie filling when you've gotten it in the shell, also top with bits of butter (~2 tbs).

Draw a neat design (for venting and decoration) on your top pie shell and away you go.

40 to 60 minutes in the oven, I think I did 425 for the first 30 min and 350 after that. I also did the crown of tinfoil on the outer edges of the crust to prevent it from getting too dark.

I was feeling extra fancy and drizzled an orange frosting on the top of the pie after I took it out of the oven. It's easily made, with that orange that you denuded for the grated orange peel.

1/2 cup powdered confectioners sugar
3 tablespoons of orange juice (strained)
1/4 teaspoon grated orange peel

Serve Chocolate-Chipolte Apple Spice Pie after it's cooled for maximum servability - with lots of love and orange sorbet with the chocolate chips in it. I think it's called "Swiss Orange".
